Costco Chicken Enchilada Bake Review
I am obsessed with all Mexican food. One of my favorite dishes is enchiladas. I actually love making enchiladas at home, but when I spotted the Costco Chicken Enchilada Bake I knew that I needed to try it.
My expectations were high, and I wanted to love this, but sadly to say this is one thing from Costco that I didn’t really enjoy. I will also not be purchasing it again.
However, just because I didn’t love it doesn’t mean that you won’t. There were some things that I did like about it and some things that I didn’t.

What is Included
The Enchilada Bake at Costco is found in the deli section with the other premade Costco meals.
It comes in a tin container that is covered with a plastic lid and it is ready to bake.
Cooking Instructions
The cooking instructions for the Costco enchilada bake state that you should preheat the oven to 400 F. Remove the lid and then loosely cover with foil. Place on a baking sheet in the center of the oven and bake for 50-60 minutes or until the internal temperature reaches 165 F.
I followed the cooking instructions exactly. I cooked my enchilada bake in the oven at 400 degrees for 50 minutes. After 50 minutes, I checked the internal temperature and it was already up to 165 degrees.
I uncovered the enchilada bake and put it back in the oven for about 3 minutes. This is not required, there was just some unmelted cheese on the top of the bake and I wanted to brown it up just a bit.
Here is what it looked like when it was done cooking. It looked really good and I couldn’t wait to try it.
Taste
While the enchilada bake from Costo looked so good, sadly it didn’t taste as good. The main thing that I didn’t like about it was the flavor of the sauce. First the sauce was very spicy and just didn’t taste good at all.
Luckily most of the sauce was right on top of the bake, above the corn tortillas, so I just took the top layer of tortillas and sauce off to be able to eat the rest of the bake. Before trying this, I wasn’t sure if it was rolled up enchiladas or a casserole style.
I can now tell you that this doesn’t include rolled up enchiladas, but it is a casserole style bake with the enchilada ingredients piled in layers. This is exactly how I make my enchiladas at home too.
Inside the bake there were corn tortillas, rotisserie chicken, pinto beans and corn. It was topped with shredded cheddar cheese and had some diced bell peppers on the top.
One thing that I did really love about the enchilada bake was the taste of the rotisserie chicken. It was actually really good. It was tender and delicious.
I found myself just enjoying the chunks of chicken that were in the bake. They were also very generous with the amount of chicken that was included.
Aside from the sauce, the enchilada bake was just ok. While the inside of the bake was a bit spicy it wasn’t too bad after scraping off the sauce.
What Others Thought
Since I hate giving a bad review, but I always want to be 100% honest, I did some research on what other people thought of this enchilada bake from Costco. While a few people did actually like it, it seemed as if the majority of reviewers didn’t care for it.
So I guess it comes down to what your personal preference is. You will never know if you like it until you actually try it.
Final Thoughts
I really wanted to love this enchilada bake. It looked so good, was super convenient to cook, and would be such an easy and quick weeknight meal. Unfortunately, I didn’t like it. My family also didn’t like it and wouldn’t even eat it.
Some things that I loved were the delicious chicken and how easy it was to cook. Overall, this is definitely one thing that I won’t be purchasing again from Costco.
While I love the idea and the bake really has potential if a few things were changed, I just personally didn’t like it. While I wouldn’t recommend it based on my personal preference that doesn’t mean that you won’t like it.
